Mousse Be Amazing!

Here, in Royal Chundu Homeschool Lesson #47, Chef Teddy presents his Baobab Mousse! Teddy lives in the Maluka fishing village alongside us at the lodge, where he harvested a fresh baobab for this dish! Baobab (Adansonia digitata) is referred to as Mubuyu in the Nyanja language in Zambia — or Ibbuyu (Tonga: Zambia), Muuyu (Lenje) or Muuyu (Lozi).

Teddy’s Recipe!

? Soak the mubuyu overnight in milk (fresh from the cow) and then remove the seeds
? To the leftover pulp add in the whipped cream — to make it firm, instead of using gelatin
? Simple & delicious ? And ready to serve
